Maui After Dark Maui After Dark When the sun goes down on Maui, nights light up a new world of fun. From world-class entertainment, to outdoor adventures, to swanky hot spots, Maui after dark offers something for everyone.

Think Global, Dine Local

Think Global, Dine Local Once a mere adjective, "fresh" is now full-blown philosophy restaurateurs are staking their name on. From deli to fine dining, close regional sourcing is proving to be the new widespread vision-and these new Maui eateries are giving localvores reason to lust.

Leave it to the gents of Pacific O and Oo Farms to provide Maui with a new boutique grocery that is both swanky and sustainable. Their new Aina Gourmet Market and deli in Kaanapali's Honua Kai Resort is founded in the signature localvore credo of a "100-mile lifestyle" referring buying and eating local food. Both handsome, and handsomely stocked, patrons can swing by for fresh Kapalua eggs, Maui-grown coffee, and island-grown produce, as well as gourmet necessities like small-batch sea salts, fine wines, and cold-pressed olive oil. Welcoming back an old flame with open arms, Lahaina's love affair with Chef David Paul Johnson is red hot after a cool hiatus. Though DP has been off Maui for the last ten years, long-time island foodies who remember the stir he created with his award-winning first location are sure to swoon over his new restaurant, David Paul's Island Grill. The oceanfront setting at 900 Front Street boasts remarkably reasonable prices, a walk-in wine cellar open for label browsing, and, of course, cuisine that is insistently island-fresh. Focusing on seasonal and sustainable, David Paul's menu changes frequently. To finish up, here's a sweet note of local gossip: Wailea is about to be served with another restaurant by Maui fav, Chef Bev Gannon. No flash-in-the-pan trendsetter, Gannon was one of the twelve original Hawaii Regional Cuisine chefs-arguably the group that spurred the eat local movement in the islands back in the '80s. Taking perch up at the Wailea Golf Club, her SeaWatch Restaurant redux takes hold in August. Though she warns major changes will not appear right away, one can bet that the same local seafood and meats that star in her home-style dishes at Joe's and Haliimaile General Store will find their way to the menu of the newest addition to her family of restaurants. Chef's Corner Maui Style

Chef's Corner Maui Style This month we have two recipes in the Chefs corner. One scrumptious seafood recipe from David Paul who is featured in this months Think Global, Dine local article. And a second recipe for a sweet pineapple dish that you can make after you take the new pineapple tour which includes picking your own fresh pineapple. You can "dine from the vine" and enjoy five tasting tours. The newest, a Farm Tour, includes enjoying the farm-fresh tastes of organic produce and pineapple varieties while learning about Kapalua Resort's colorful plantation past and innovative farming future. After touring Kapalua Farms' diversified operations you pick a sweet Kapalua Gold™ pineapple.

Island Style Snapper

FISH

Ingredients:
6-8 6 oz filets of Snapper, Ono, or Mahi
1 T Oil
Salt & Pepper for seasoning
Directions:
  • Lightly season and oil filets
  • Heat a medium sauté pan on Med/High heat
  • Cook both sides for 2-3 minutes or until brown
  • Remove from heat
 

RICE

Ingredients:
1 cup jasmine rice
1 ½ cup clam Juice
½ tablespoon chopped pickled ginger
1 teaspoon chopped shallots
1 tablespoon butter
Directions:
  • Sweat ginger and butter in saucepan for 45-60 seconds
  • Add rice to saucepan, stirring constantly for 1-2 minutes
  • Add clam juice, bring to light boil
  • Reduce heat, and let simmer for 7-8 minutes with lid on
  • Remove lid, and fold rice with a rubber spatula
  • Leave lid off for 2-3 minutes, and allow to thicken
  • Once all liquid has been absorbed, put lid on and remove from heat
 

ASIAN SLAW

Ingredients:
6 leaves of Napa cabbage, thinly sliced (crosswise)
6 green onions, thinly sliced
2 red chilies, seeded and thinly sliced
48-50 cilantro stems, leaves only
1-2 garlic cloves, shaved
Directions:
  • Mix all ingredients and place in ice bath for 10-15 minutes until crisp
  • Drain & pat dry
 

SAUCE

Ingredients:
¼ cup white soy (wheatless Tamari soy)
2 tablespoons dark wheatless Tamari soy or
regular soy sauce
¼ cup peanut or salad oil
1 tablespoon ginger root
1 tablespoon sesame oil, optional
1 teaspoon Siracha, optional
Directions:
  • Heat the sesame oil, both soy sauces, ginger, and siracha in a saucepan
  • Stir constantly, mixing ingredients together
  • Heat salad oil, but make sure it is not smoking
 
ASSEMBLY
 
 

Kapalua Gold Pineapple Crème Brulée

Ingredients
1 qt. whipping cream 36%
1 ea. vanilla bean (split in half)
12 ea. egg yolks
6 oz. white sugar
1 oz. cornstarch
3 ea. Kapalua Gold™ organic pineapples (about 2 lbs. each)
Makes 6 servings.
Directions:

In a small sauce pot, boil the cream and vanilla bean for at least 2 minutes until the vanilla bean is soft, scrape the inside of the vanilla bean and mix. Meanwhile, mix the egg yolks, sugar and cornstarch and add to the cream. Simmer until the mix is incorporated to the cream and becomes thick; set it aside and cool until ready to pour in the hollowed pineapple.Hollow a small pineapple about 1/3 from the bottom, remove the middle portion, pour the cream mix almost to the rim and top it with a spoonful of white sugar. Caramelize the white sugar by burning it with a hand torch.

Favorite Maui Moments

Favorite Maui Moments I have traveled to Maui 4 times in the last 10 years because I love it there! All of my visits have been memorable, but the last visit there I have to say was my favorite. It was June and for my son's graduation from high school, as a grad present I booked a trip to Maui. My daughter Chloe, my son Kyle, my friend Tammy and I were all off to Maui from Washington State. I can remember looking at my kids as we were flying around the island before landing and I could see the excitement in their faces. They couldn't wait to explore this beautiful place.

Before we knew it, we were in and out of the airport with our rental car and on our way to Kihei where our condo is. I consider Kihei to be the best place on the island to stay, as it is the center of all the fun. Once settled in we headed to the rental counter to pick up our snorkel gear and boogie board which takes only minutes and provides inexpensive fun for everyone. We were quickly off to the beaches, not wasting a minute of precious time. My favorite place to snorkel was Honolua Bay, just past Kapalua. My kids had a blast! The beach was perfect, just like a post card. They snorkeled all day and saw hundreds of beautiful fish, a memory that will last a life time.

One thing about Maui, all of the beaches are amazingly beautiful. The next morning we geared up for Makena beach which was a lot of fun once we found it. We quickly learned that it wasn't as easy as we originally thought to find some of these local treasures but the challenge of the hunt had all of us focused on the goal. The reward was seeing the smiles on my kids' faces as they were swimming in the ocean waiting for the perfect wave to ride the boogie board and landing on the white sanded beach, sometimes racing their father to see who could ride the wave the farthest.

We all had so much fun that we didn't want to leave but we'll most definitely be back. Until then we have pictures and memories to laugh about and share with our friends. Thank you Maui for an unbelievable time of all our lives and we'll see you soon.

Maui Aumakua 2.4 Mile Swim and Sprint Mile

5th annual USMS & USA-S (for members who are in good standing) This is a rectangular course and entrants must be able to swim one mile in less than 35 minutes. The race will begin at South Maluaka Beach fronting the Maui Prince Hotel, Makena. For more information, please go to www.aumakuaswim.org.

38th Annual Hana Relays

This is an incredible fifty-two mile race along Maui's famous Hana Highway through some of the most breathtaking scenery in all of Maui. 2009 Festivals of Aloha - Maui Nui Style

The Maui Photo Festival and Workshops is a signature event that celebrates digital photography with world-class photographers from around the world. At the Maui Photo Festival will have a blend of classroom sessions, location shoots, real-world assignments and demonstration and hand-on opportunities as well as optional afternoon excursions that will include doors-off helicopter tours with a former aerial combat photographer, underwater excursions, and photo safaris led by professional photographers. Come early on Thursday, Friday & Saturday mornings to take advantage of Golden Hour Excursions to some of the world's most scenic landscapes and seascapes. In the evenings, attendees will gather on the Napili Lawn for presentations on the Paradise Cinema, an outdoor big screen theater on Kaanapali Beach. (Space in some excursions is limited. Maui Marathon & Race Events

On September 18th, the Maui Marathon Expo takes place at the Westin Maui Resort & Spa ballroom from 1:00pm - 8:00pm. The Maui Carbo Luau at the Westin Maui is at 6:00pm.
On September 19th, the 9th Annual Maui Tacos 5k Run starts and finishes at Whalers Village in the Kaanapali Resort. Race will start at 8:00am. The Run Forrest Run Front St. Mile event is also on the 19th starting at 3:00pm in front of "Bubba Gumps" The course is a 1-mile race down Front Street in Lahaina.
On September 20th, the Maui Marathon starts in Kahului at the Queen Kaahumanu Center . The 39th Annual Maui Marathon will have a Hawaiian theme to display the culture and the people of Hawaii. Marathon begins at 5:30am after the Hawaiian blessing and conch shell blowing performance. The Maui Half Marathon is held concurrently with the full marathon, the half marathon will start at the marathon's finish line area near Whalers Village within the Kaanapali Resort area. Na Wahine O Ke Kai

Women of the Sea

The race will start at the entrance of Hale O Lono Harbor, Molokai and begins at 7:30am.

This race ends the 9-month season of outrigger canoe racing for women around the world. Na Wahine O Ke Kai is celebrating their 29th year as they compete in this 40-mile race to Oahu. On Hana Maui, the Festivals of Aloha will be celebrated for a week-long starting with a town parade & Hoolaulea. The parade will start at 11:00am at the Hana Town center and ends at the Hana Ball Park. Enjoy food and crafters booths, hula, Hawaiian entertainment, games, tournaments and all kinds of contests from muumuu & aloha shirt, poke, ulu, floral & lei throughout the week. On Friday, October 23rd enjoy the luau at Hana Bay starting at 5:00pm will conclude the festivities. There will be an admission at the gate or presale tickets.
